I got broccoli and brussels sprouts from my uncle K who lives nearby. I used them to make soup. I thought a creamy soup would go well with broccoli and Brussels sprouts, so I decided to add cream cheese to the soup. My challenge was successful. I made a very creamy and delicious soup. Ingredients for 1 serving
- 2oz (60g) Bacon
- 2oz (60g) Onion
- 2 tsp olive oil
- 3/5 cup (140ml) water
- 3.5oz (100g) broccoli
- 3.5oz (100g) brussels sprouts
- 3/5 cup (140ml) soy milk
- 1 tsp consomme soup stock
- a little salt & pepper
- 2 tsp white wine
- 2 tbsp cream cheese
- Slice the bacon into one-bite pieces.
2. Finely chop the onions.
3. Light the pot over low-heat. Pour 2 tsp olive oil. Put and brown the bacon slices. Then, put and brown onions.
4. Once bacon and onions are well cooked, pour 3/5 cup (140ml) water.
5. Put 3.5oz (100g) broccoli.
6. Put 3.5oz (100g) brussels sprouts.
7. Boil 8 min with low heat.
8. After the ingredients are well cooked, pour 3/5 cup (140ml) soy milk, 1 tsp consomme soup stock, a little salt & pepper, and 2 tsp white wine. Bring it to a boil.
9. Finally, put 2 tbsp cream cheese.
10. Mix in the cream cheese and melt it.
It is very creamy and tasty!
Simmer all ingredients in water for 8 minutes; cook for 8 minutes and check the firmness of the Brussels sprouts. If they are soft, they are fine. Be careful not to overcook them or they will become too soft. Be careful not to spoil the flavor of the cream cheese. Therefore, the cream cheese should be added to the soup at the very end. Garlic is also a great addition to this soup. You can add 1tsp of garlic to make it even better. Try it for yourself.
