Ingredients for 1 serving

  1. 1.5 oz (40g) onion
  2. 1.5 oz (40g) bell pepper
  3. 3.5 oz (100g) small tomatoes
  4. 1 clove of garlic
  5. 2 tsp olive oil
  6. 1 cup (250ml) water
  7. 1 tsp consomme soup stock
  8. 2 tbsp cream cheese
  9. a little salt & pepper

  1. Finely chop the onion, green bell pepper, and garlic. 

2. Cut the small tomatoes in half.

3. Heat the pan over low heat. Add the olive oil. Add the garlic and fry until fragrant, without burning.

4. Add the vegetables (onions, peppers, and small tomatoes). Stir-fry for about 5 minutes, crushing the small tomatoes a little. 

5. When the vegetables are fully cooked, add water and consommé soup stock and simmer for about 5 minutes.

6. After 5 min, put 2 tbsp cream cheese.

7. Use a hand mixer to smooth out the soup. Once smooth, heat for 1 min and transfer to a plate.

8. Finally, sprinkle a little salt and pepper over the soup to finish.

Key point

The vegetables will be smoothed later with a hand mixer, so coarsely chopped is fine. Be careful not to burn the garlic.
